Cauliflower Rice

Are you, or have you ever been on a low carb diet and just dreamed of the rice you couldn’t have. That savory vessel to soak up all of the amazing juices of whatever you’re eating, flavoring the rice into a delicious bed of carby goodness. Yeah, low carb sucks.

Until now.

 I had heard of cauliflower rice before and yes, I was very skeptical. I mean c’mon. Cauliflower as a substitute for rice? Yeah, sure… But then I tried it. And it changed my mind. Even my mom who does not like cauliflower liked this. So for a healthier more nutritious substitute for rice, try this out!

Cauliflower Rice

(Recipe adapted from Everyday Maven)

Ingredients

1 head cauliflower, cut into small florets

olive oil

1 clove garlic, minced

salt and pepper

 

Directions

Place the cauliflower florets into a food process. Pulse until it’s crumbly and resembles rice. Try not to over process otherwise it will turn into a paste.

Heat a bit of olive oil in a pan over medium high, cook the garlic for about 30 seconds before adding in the cauliflower. Continue cooking for about 5-10 minutes, season to taste.
